Distillery Collection individually reveals the spirits behind the renowned Diplomático Rums. With the distinctive personality of each rum shown at its best in one-of-a-kind products, this limited edition allows fans of fine spirits to discover the pure essence of Diplomático’s different distillation styles. A special edition showcasing the three different distillation processes of Diplomatico and the characteristic of each individual rum. The Distillery Collection features three expressions.
DIPLOMATIC RUM DISTILLERY COLLECTION NO. 1 SINGLE KETTLE BATCH
Made from the finest sugar cane honeys, Distillery Collection No. 1 matures in oak barrels previously used to age Bourbon and Scotch. The Batch Kettle still was brought to La Miel Distillery in 1959. This semi-craft distillation system originated in Canada, where it was used for the production of Whisky. The Batch Kettle is a batch distillation system, similar to traditional pot-stills, but with an attached column that replaces the long “swan neck.” It is in this column with various plates that separation takes place, in a more controlled and precise manner, so as to obtain an organoleptic profile more in line with the expectations of the master distiller.
DIPLOMATIC RUM DISTILLERY COLLECTION NO. 2 SINGLE COLUMN BARBET
Made from high-quality sugar cane molasses, Distillery Collection No. 2 is aged in American oak barrels until it reaches optimal maturity. The Barbet Column, a discontinuous still of French origin, was brought to La Miel Distillery in 1959. This distillation system consists of two columns both made of copper: the Aldehyde Column, where unwanted elements are separated from the rest of the liquid, and the Rectifying Column, where congeners are separated and only the desired elements are retained, such as esters and aldehydes. This rectification system is not found in other traditional column extraction systems. Unique in its design, it gives the distillate its characteristic organoleptic profile.
DIPLOMATIC RUM DISTILLERY COLLECTION #3 SINGLE POT STILL
Characterized by the individual personality of each rum, Distillery Collection No. 3 presents the most classic and rare expression: the Copper Pot Still Rum.
The Pot Still copper still was brought to the La Miel distillery in 1959. This batch distillation method was originally used in Scotland for whiskey production. Produced using the best selection of sugar cane honeys, the spirits are aged in American white oak barrels until they reach the perfect degree of maturity, resulting in a complex rum. This rum represents the heart of Diplomático’s flavor profile.
Through distillation in Pot Still, a very complex distillate is produced, thanks to the use of sugar cane honeys and a prolonged fermentation process that allows rich scents and aromas to develop. During the distillation process, the rum develops an additional sensory profile, combining red and tropical fruits with underlying notes of toffee and vanilla. Balanced and well-structured on the palate, where notes of wood combine with coffee and dark chocolate. The finish is long and persistent. It best expresses its personality when savored neat.
