WINEMAKING
The finest grapes are harvested by hand and arranged in single layers in small boxes of up to 5 gk 1 each. Grapes are placed for 4 weeks in ventilated fruit cellars at a constant temperature. The natural enzymatic processes of grapes thus allow the development of aromatic and gustatory peculiarities. Grapes must be handled with gloves on so as not to compromise their delicate balance. The wine ages for seeks 8-10 months in small, medium-toasted wooden barrels. About four months after bottling, it begins to express its characteristics to the fullest.
TASTING NOTES
The wine obtained from partial drying of grapes is opulent, powerful, but finely balanced. Candied notes wrap themselves around roasted ones, giving the palate fullness and sensuality.
PAIRINGS
Savory meats, baked pasta, aged cheeses, extra noir chocolate. Serve 1 hour after opening. Serve at 14-16°C
