TERRITORY OF ORIGIN Marsala and Mazara del Vallo Agro of Marsala and Mazara del Vallo Province of Trapani
TERROIR Soil: medium-textured, tending to clayey. Elevation: a few meters above sea level. Climate: Mediterranean, mild winters, limited rainfall, very hot and windy summer.
WINEMAKING AND REFINING Harvest time in the second decade of September, when ripening is advanced. Vinifi cation at 20°-22°C. Fermentation is arrested by addition of neutral alcohol. Next, cooked must is added. Minimum 24-month aging in oak barrels.
TASTING Color: firm amber. Nose: intense and persistent, with distinct notes of quince and pleasant hints of dry fi co and vanilla. Taste: sweet and lingering, with intense hints of dried apricot and pleasant honeyed notes.
PAIRINGS Traditional: all Sicilian desserts with ricotta and pastry creams. Unconventional: rondella of caciocavallo ragusano cheese with candied orange peel and caramelized sesame sail on Tumminia bread crouton. Serve at 12°-14°C.
