HARVEST
2013. Winter with frequent snowfalls, but rather mild. Rainy and very cold spring. Early stages of the vine cycle marked by these meteorological obstacles: late bud break and reduced bud fertility. Flowering took place in early June, always accompanied by unfavorable weather conditions.
From mid-April to the second decade of June it rained every 2 days, but with the arrival of summer the weather has changed radically and we have moved on to the excesses of weather in recent years, with maximums that have touched 40 ° C. . Thunderstorms arrived at fairly regular intervals to quench the thirst of the vines.
When the grapes were ready for harvest, after August 15th, there was heavy rain
marked the vintage. After so many years we have reviewed the g rigy mold that made it necessary to select the grapes both in the countryside and in the cellar. Never as this year has our grape sorting and washing plant been crucial to change the face of this apparently difficult vintage, but made valuable by us.

THE VINIFICATION
Cuvée Annamaria Clementi Rosé is the maximum expression of pure Pinot Noir vinified in pink,
in Ca ‘del Bosco style. The grapes, in compliance with our vinification method, are harvested by hand in small boxes, are promptly coded and cooled in cold rooms. Each bunch is selected by expert eyes and hands, to then benefit from our exclusive “spa of the bunch”. A particular system of washing and hydromassage of the bunches, through three soaking tanks and a system for complete drying. For de-stemming, the bunches are transferred over the vat and then fall into it by gravity. This eliminates the traditional pumping systems, which are the cause of the breakage of the skins and unwanted herbaceous notes. Following a short maceration of the grapes at a temperature of 14 ° C to obtain that particular intense pink color and that aromatic profile of extreme finesse and harmony that will characterize the Cuvée Annamaria Clementi Rosé in the bottle. All the vinification phases of the different base wines take place in small oak barrels obtained from selected woods and aged for at least 3 years and stored in deep and cool underground cellars. Alcoholic fermentation, malolactic fermentation and barrel aging last a total of 8 months. The Cuvée Annamaria Clementi Rosé was born from the art of knowing how to assemble base wines from the 3 historic vineyards by selecting only the wine from the best barrels. It is tapped by gravity and a pair of flying tanks transfers it by gravity, from the barrels to the assembly tank. It takes at least 8 more years of aging on the lees to achieve that olfactory harmony and excellent gustatory balance that make Cuvée Annamaria Clementi Rosé a supreme Franciacorta. The dégorgement takes place in the absence of oxygen, using a unique system in the world, designed and patented by Ca ‘del Bosco. This avoids oxidative shocks and further additions of
sulphites and makes our Franciacortas purer, more pleasant and longer-lived. Finally, each packaged bottle is uniquely marked, to guarantee its traceability.
