Production area: Contrada Zottorinoto and Contrada Rampante, Solicchiata. North side of Etna.
Altitude: 600 – 900 m.s.l.
Grape variety: Nerello Mascalese.
Soil: sandy loam with abundant presence of skeleton.
Training system: Sapling and espalier of 40 – 80 years of age.
Harvest: second decade of October.
Vinification: Manual harvesting of the grapes, soft pressing. Maceration in contact with the skins for 18 days in concrete tanks.
Aging: 14 months of aging in French oak tonneaux. Natural malolactic fermentation.
