Champagne Jose Ardinat Cuvee Speciale Brut
This cuvée is characterized by the presence of Chardonnay and you can notice it as soon as you smell the wine. The aftertaste is somewhat sincere but robust due to the long aging on lees in large oak barrels. The structured finish perfectly recalls the terroir of Vandières.
This cuvée will win over the most refined palates and pairs wonderfully with seafood dishes.
It was Serge FAUST, Joëlle’s father, who decided as early as 1968 to adopt agrobiological production processes on his own land. No predefined production model was suggested to the pioneers of this type who had to “invent” a new method of cultivation. Great was the risk because the conversion affected the whole vineyard. In the early days it aroused enthusiasm to discover a new way of cultivating vines, but at the same time, doubting was part of daily life. The difficulties will not affect the will of the family; on the contrary, they will make it more united around this ambitious project.

In his first steps in “BIO” viticulture, Serge Faust initiated the conversion to the LEMAIRE-BOUCHER method.
