The name “Fermata 125” given to the wine, indicates one of the 4 stops in Passopisciaro (the second one, number precisely 125), located right in front of Cantine Valenti that produce in partnership with Baglio di Pianetto the wines we are talking about.
Gentle destemming of grapes and fermentation in temperature-controlled stainless steel with pisage for about ten days.
In large barrel for 12 months and in steel before bottling.
