NAME ORIGIN: Ficiligno is the defining soil of the Pianetto estate.
TYPE OF DENOMINATION: Sicily DOC Organic.
VINEYARD LOCATION: Contrada Pianetto, Santa Cristina Gela (PA).
YIELD PER HECTARE: 90 quintals.
VINEYARD DENSITY: 4,830 plants per ha.
SOIL TYPE: Medium-textured tending to clayey, rich in skeleton and minerals.
ALTITUDE: 650 m above sea level.
CULTIVATION: counter-espalier.
PRUNING: spurred cordon 8/10 buds.NUMBER OF BOTTLES PRODUCED: 40,000.
FIRST VINTAGE PRODUCED: 2001.
GRAPEVINE: Insolia – Viognier.
HARVEST: Between August and September, manual, at three different times to create three bases (acidic/technical maturity/overripe) to impart the exotic sensual notes typical of Viognier.
VINIFICATION: Selection of grapes using sorting belts. The part in technological maturity rests in the cold room to promote cryo-maceration. After destemming, a presssoffice is made. Fermentation takes place separately for the singoleractives. Natural settling and alcoholic fermentation for about 40-60 days at low temperatures. The third harvest, in over-ripening, performs fermentation start-up in steel in the presence of the skins in maceration about a week at 8°C; then, the flower must is racked into fermentation tanks for at least 5 months to achieve full maturity in sur-lies. One month before bottling, the marriage of the various cuvées takes place.
AGING: 6 months on the lees in stainless steel tank.
TOTAL ACIDITY: 6.10 g/L .
ALCOHOLIC DEGREE: 13.5%.
SENSORY ANALYSIS:
VISUAL: straw yellow, faint.
OLFACTIVE: Floral notes of rose, broom and tropical fruit.
TASTE: Balanced, savory, confirming notes of mango, ripe pineapple and passion fruit on the aftertaste.
PAIRING: wine for the entire meal because of its varied adaptability to elaborate dishes, rich in strong flavors.
