Barolo Chinato Cocchi
Originating in Piedmont in the last century, it immediately became popular due to its well-dosed bitter-sweet taste and especially the market-driving effect of the name “Barolo,” which placed it among the noble products compared to the various types of cinchona-based alcoholic beverages.
Inventor of an original recipe, Giulio Cocchi was for Barolo Chinato also the protagonist of its diffusion.
In Italy, consumption of Barolo Chinato was helped by its reputation as a medicinal wine. In Piedmontese tradition it became the main antidote to many minor ailments, especially colds. Drunk as mulled wine, hot and invigorating, its antipyretic and digestive abilities were praised. Serving it to guests became a ritual gesture of peasant hospitality.
With the passage of time, the use of this flavored wine has changed, and today, on the wave of the recovery of traditions and naturalness, it is being rediscovered in new and interesting styles of consumption.
FEATURES
Barolo Chinato is a special wine made from Barolo DOCG (Denominazione d’Origine Controllata e Garantita), flavored with calissaja cinchona bark, rhubarb and gentian root, and the precious seed of cardamom, whose active ingredients are extracted by slow maceration at room temperature.
Characterized by balance and harmony in aroma, immediate palatability and pleasant aromatic persistence.
HOW TO EARN IT
Opportunities to appreciate it are among the most diverse with particular success in fine dining when served at room temperature as an elegant end to a meal or steamed with an orange peel. Almost surprising is the recent discovery of Barolo Chinato as the “ideal liquid” to hold up and complement the lingering taste of even the most cocoa-rich chocolates.
Andrea Slitti, among the best maîtres chocolatier, has created an artisanal Barolo Chinato praline of the highest standard that Giulio Cocchi distributes to accompany the tasting and demonstrate its successful marriage.
