The first thing you smell is the scent of the volcano, flowers and fruit, balsamic notes come from the two years spent in chestnut barrels. A zero-kilometer chestnut tree, which comes right from the estate’s woods, and which guarded the grapes all the way from the rows to the bottle. The sensation on the palate is surprising, as the tannin from the wood is combined with an unusual touch of liveliness, obviously gentle and very fine.

Pairings: Slices of red meat and tuna, seafood and land roasts, excellent with Nebrodi Mountains cured meats and sweet and sour dishes.
