On the Mountain:

The vineyard is located in Contrada Cavaliere, on the southwest slope of Etna, in the municipality of Santa Maria di Licodia (CT). This district is particularly renowned for its high altitude, nearly 950 meters above sea level, and abundant light, ideal for growing Carricante.

Vineyard Details:

• Location: Contrada Cavaliere, Santa Maria di Licodia (CT)
• Altitude: Nearly 950 m above sea level.
• Soil: Sandy volcanic, rich in minerals and skeleton, with excellent drainage capacity and sub-acid reaction
• Viticulture: espalier cultivation
• Planting Density: Approximately 6,500 vines per hectare
• Yield: 6,000 kg/ha
• Climate: Mountainous, low rainfall, with high ventilation and significant temperature ranges

Vinification and Aging:

• Harvest: Manual around mid-October
• Pressing: Destemmed and pressed with soft pressing
• Fermentation: About 15 days at a controlled temperature of about 18°C in steel tanks, using selected indigenous yeasts
• Maturation: 12 months in tank on noble lees with periodic bâtonnage
• Aging: About 6 months in bottle

• Color: Straw yellow with bright green highlights
• Aroma: Intense, rich, broad and delicate, with hints of orange blossom and ripe apple
• Taste: Dry, mineral, harmonious with pleasant acidity and aromatic persistence, with anise and almond aftertaste
