Vineyard in Contrada Rinazzo, east side of Etna within the Municipality of Milo (CT). Contrada facing the sea, particularly suited for the cultivation of Carricante. Altitude: about 800 m. s.l.m.
In the Vineyard.
Carricante in purity, autochthonous white grape variety from the Etna volcano. The vineyard, consisting of multiple terraces with dry stone walls, grows on sandy volcanic soil, rich in minerals, with a sub-acid reaction. The vines are trained with traditional sapling, with the support of chestnut poles, with a planting density of about 8,000 plants per hectare and a yield of about 6,500 kg / ha. Mountain climate, humid with frequent rainfall, even snowy in the winter months and with excellent ventilation.
In the basement.
The grapes are harvested by hand in mid-October, de-stemmed and pressed with soft pressing of the bunch. Fermentation takes place for about 15 days at a controlled temperature of 18 ° C in steel tanks, using a specific indigenous yeast selected in the vineyard after a long experimentation. The wine is left to mature in tanks on the noble lees, with periodic bâtonnage, for 12 months. After bottling, it is refined in the bottle for about 6 months.
In the Chalice.
At sight, it appears straw yellow in color with bright green reflections. The nose is intense, rich, ample, delicate, fruity with hints of orange blossom and ripe apple. Dry on the palate, mineral, harmonious with a marked acidity and aromatic persistence with an anise and almond aftertaste.
Serving temperature: 12 – 14 ° C
At the table.
It goes well with all fish-based dishes, even elaborate ones.
