UVE: Single Parcel Chardonnay (100%) sourced exclusively from the central portion of the Arzelle estate vineyard, with high planting density (10,000 vines/hectare).
HARVEST TIME: second decade of August 2012. YIELD: 8,500 kg of grapes per hectare, with a must yield of
By 28 percent equivalent to 3,170 bottles per hectare.
VINIFICATION: Soft, progressive pressing of the grapes with fractionation of the musts; alcoholic fermentation in steel vats and aging of the best plots in oak barrels, where they mature for 6 months in contact with the yeasts.
MATURATION: Preparation of the cuvée in the first- true following the harvest, exclusively with 100% wines of the vintage. Second fermentation in the bottle and subsequent aging on the lees for at least 5 years, followed by another 6 months after disgorgement.
DOSAGE: Zero dosage.
FORMATS: 750 ml bottle ORGANOLEPTIC FEATURES:
VISUAL APPEARANCE: Abundant, creamy mousse with good persistence of a faint corona; fine, sinuous perlage.
COLOR: deep straw yellow with slight hints of old gold.
NOSE: broad and deep, characterized by notes of ripe plums, linden blossoms and tertiary notes of caramelized hazelnuts.
TASTE: On the palate, the wine is characterized by elegance and balance in an interplay of smoothness and calibrated acidity. The finish is satisfying with slight tactile sensation supported by the very fine perlage.
ACCOSTATIONS: This is a Millesimato recommended throughout a meal; it pleasantly accompanies important hors d’oeuvres, fish main courses, white meats and medium-aged cheeses.
SERVING TEMPERATURE: 10-12 °C.
