Berlucchi ’61 Nature 2014 Franciacorta DOCG
GRAPES: Chardonnay (70 percent) and Pinot Noir (30 percent), from the estate vineyards Arzelle, Rovere, San Carlo and Ragnoli; all at high planting density (10,000 vines/hectare).
HARVEST TIME: third decade of August 2014. YIELD: 9,000 kg of grapes per hectare, with a must yield of
30% equivalent to 3,600 bottles per hectare.
VINIFICATION: Soft, progressive pressing of the grapes with fractionation of the musts; alcoholic fermentation in steel vats and aging of the best plots in oak barrels, where they mature for 6 months in contact with the yeasts.
MATURATION: Preparation of the cuvée in the spring following the harvest, exclusively with 100% wines of the vintage. Second fermentation in the bottle and subsequent aging on the lees for at least 5 years, followed by another 6 months after disgorgement.
DOSAGE: Zero dosage.
ORGANOLEPTIC CHARACTERISTICS:
VISUAL APPEARANCE: Abundant, creamy mousse with good persistence of a faint corona; fine, sinuous perlage.
COLOR: deep straw yellow with slight coppery hues.
BOUQUET: complex and elegant, characterized by a distinct note of yellow-fleshed fruits and candied citrus fruits intertwined with aromas of brioche bread.
FLAVOUR: On the palate, the wine is characterized by structure and power supported by vivid acidity; the final sapidity lends dynamism and flavor tension.
PAIRINGS: in pairing, it enhances to the fullest structured pasta dishes and fresh stuffed pasta, stewed fish dishes, meat dishes and cheeses, including aged cheeses.
SERVING TEMPERATURE: 10-12 °C.
