Berlucchi ’61 Nature Blanc de Blancs 2014 Franciacorta DOCG

GRAPES: Chardonnay (100%), coming from the central portion of the Arzelle vineyard, with a high plant density (10,000 plants / hectare).

HARVEST PERIOD: third decade of August 2014. YIELD: 8,500 kg of grapes per hectare, with a must yield of

30% equivalent to 3,400 bottles per hectare.

VINIFICATION: soft and progressive pressing of the bunches with fractionation of the musts; alcoholic fermentation in steel vats and aging of the best parcels in oak barrels, where they mature for 6 months in contact with the yeasts.

MATURATION: preparation of the cuvée in the spring following the harvest, exclusively with 100% of the vintage wines. Second fermentation in the bottle and subsequent aging on the lees for at least 5 years, followed by another 6 months after disgorgement.

DOSAGE: Zero dosage.

ORGANOLEPTIC CHARACTERISTICS:

VISUAL APPEARANCE: abundant and creamy foam, with good persistence of a tenuous crown; subtle and sinuous perlage.

COLOR: intense straw yellow with shades of antique gold.

BOUQUET: wide and deep, characterized by notes of lime blossom, yellow fruits and tertiary notes of pastry.

TASTE: on the palate, the wine is characterized by structure and power supported by a vivid acidity, the final sapidity gives dynamism and gustatory tension.

PAIRING: it is a Millesimato recommended for the whole meal; it can enhance refined and complex aperitifs, seafood dishes, risottos, fish main courses, white meats and medium-aged cheeses.
