A tribute to Louis, Elisabeth Salmon’s brother, a wine enthusiast who has been actively involved in the production of the wines since the Maison’s inception. This pure and mineral Blanc de Blancs millesimato, from the best plots in the Côte des Blancs, represents it perfectly.

Tasting Notes

Sophisticated elegance of a mineral and extremely precise Chardonnay. Its natural balance harmoniously reflects the characteristics of the best Grand Cru plots of the Côte des Blancs: Cramant and Chouilly for finesse, Avize for intensity, and Mesnil-sur-Oger for structure and longevity

APPEARANCE
Crystal-clear visual appearance of a pale golden color with delicate highlights, characterized by shades of yellow and green. A lingering, charming and luminous effervescence.
PALATE
A creamy tactile sensation of splendid and precise finesse. Excellent refreshing balance from the natural flavors of cedar zest, almond cookie and white pepper. This powerful and highly typical wine offers a prolonged finish with extraordinary aromatic persistence (sugary citrus pulp, cardamom and vanilla choux).
AROMA
The attack expresses impeccable and complex maturity, with aromas of yellow fruits and citrus (candied tangerine, limoncello, pear conference). A flavor profile of sophisticated purity with a balanced and crystalline chalky character (cedar and raw butter).
TASTING
The unique dimension of a wonderful pure and intense Blanc de Blancs, offering a verticality perfectly associated with its low dosage. Its potential and balance express a remarkable finesse equal to classy flavor pairings (Corrèze veal sweetbread cooked whole in a pot, creamy seafood risotto).
