Tasting Notes:
To the eye: It is crystal clear, with a pale golden color and delicate reflections of yellow and green. Persistent effervescence lends charm and luminosity to the glass. Nose: The aroma is complex and ripe, with hints of yellow fruit and citrus, including candied tangerine, limoncello and pear conference. Balanced and crystalline chalky character notes also emerge, enhanced by accents of cedar and raw butter. Palate: A creamy tactile sensation accompanies an extraordinary finesse. The refreshing balance is highlighted by flavors of cedar zest, almond cookie, and white pepper. Powerful and typical, the wine gives a prolonged finish with an extraordinary aromatic persistence, reminiscent of sugary citrus pulp, cardamom and vanilla choux. Tasting: This Blanc de Blancs offers a unique verticality, combined with a light dosage that enhances its potential and balance. It is ideal for classy flavor pairings, such as Corrèze veal sweetbread cooked whole in a pot or creamy seafood risotto.
