GRAPE VINE Pinot Noir 100%TIPOLOGYOF SOIL Predominantly composed of chalky limestone. VINIFICATION In keeping with the tradition of the house, this Champagne is made from the cuvée, or juice from the first pressing of the grapes. Foaming is followed by a long aging on the lees before disgorgement.Half of the grapes ferment in steel, the other in wood and refermentation in the bottle according to the Champenoise Method with dégorgement in November 2019COLOR Straw yellow with golden highlights. PERFUME On the nose an attack with aromas of cherry stone, fruit jam and dried figs. This is followed by a toasty, pastry-like scent that is rich and complex, accompanied by notes of pear and hawthorn.PAIRINGS Pair with langoustine and truffle risotto, it goes well with seafood main courses and delicate white meats. TASTE On the palate, the fruity deliciousness of this wine marries perfectly with its crispness, releasing a riot of flavors: peach and apricot enhanced by notes of hazelnut and acacia flowers. Sublime aromatic richness culminating in a lively finish with yuzu tones.TASTING NOTES Champagne PN VZ16 is Maison Bollinger’s exclusive vision of Pinot Noir. The blend of this PN VZ16 edition is the result of the harvest of 100% Pinot Noir mainly from the Verzenay crus in association with crus located in Bouzy, Ay and Tauxières; the base vintage is 2016 with vin de réserve up to 2006. Pinot Noir represents one of the pillars of the Bollinger style, which has based its reputation on exalting the characteristics of this grape variety. The PN cuvée, of which this 2021 edition is the second, is the result of numerous studies on the taste of Pinot Noir and its different origins in the Champagne region. It helps keep the tradition of this heritage alive and affirms Bollinger’s legendary style while demonstrating remarkable ability to reinvent itself each year. This edition features the elegance and crispness of Verzenay’s Pinot Noir, bringing to PN VZ16 all the best expressions of Pinot Noirs from this terroir: depth, elegance and tension, associated with a saline finish.Bollinger’s PN VZ16 is undoubtedly a Champagne to be shared among enthusiasts, to appreciate the many expressions of Pinot Noir. This PN VZ16 edition represents a second interpretation of this. More will follow, with the goal of continuing to explore Bollinger’s many terroirs.DESCRIPTION Maison Bollinger is located in Ay, one of the historic villages in the heart of Champagne, and the quality of its wines is universally recognized, even by competitors. Thanks to the privileged location of the vineyards, and a deep ethic of quality, Maison Bollinger quickly gained an international reputation for the style and quality of its Champagne wines. In 1992 the Charter of Ethics and Quality was drawn up on which all the methods and principles defended by Maison Bollinger were put in writing. Bollinger’s vineyards meet 70 percent of its grape requirements, spread over an area of 160 hectares located essentially within the boundaries of the grands crus and premiers crus champenois. The remaining 30 percent comes from grapes selected and purchased from other winemakers within the perimeter of grands and premiers crus. Maison Bollinger uses only the wine from the first pressing, reselling the second pressings. The Bollinger style is based on pinot noir, mainly from the prestigious territories of Aÿ, Bouzy and Verzenay. Its typicality gives wines richness, vinosity and roundness. The grands crus and premiers crus enter in their entirety into the composition of the Grande Année blend and 80% into that of the Special Cuvée. They bring their structure and complexity to Bollinger wines. Reserve wines are stored in magnums with corks under a light foam grip, cru by cru, varietal by varietal, vintage by vintage. This method, unique in Champagne, allows Maison Bollinger to store its reserve wines for many years while preserving their freshness and character. Thus having a true enoteca, Maison Bollinger can choose with great precision the cru, varietal and vintage that will best ensure continuity in the Special Cuvée assemblage.
