Drouin Selection is a Calvados AOC with a very light flavor profile, ideal for blending and very easy smooth drinking. The Calvados AOC specification is followed for its production-the rest of Drouin’s production falls under the restrictive Calvados Pays D’auge specification-similar to that of Calvados Domfrontais. Selection is made from 60/70% apples of the 30 varieties for Cider and a 30/40% of pears, which give a very pleasant fruity note. Aging lasts a maximum of 2 years to maintain all the freshness of the fruit.

At Douin special care is given to apples. After harvest they are brought to perfect ripeness, then washed thoroughly, carefully selected and allowed to rest before pressing in order to have the perfect concentration of tannins, which remain much less bitter after this period. The apples are then passed to a pneumatic press that imparts a level of force similar to that required for champagne. Yields are lower than average, at around 65 percent, but in contrast the juice obtained is very fresh and fragrant, and above all not very astringent and acrid.
