Malvasia passita is the history of the Aeolian Islands. It was royal wine throughout Europe until the early twentieth century. Phylloxera, emigration and wars almost made its traces disappear. The grapes, at the right ripeness, are harvested by hand and placed to dry in the Mediterranean September sun on traditional cannizzi (trellises) for about 15-20 days. After vinification, without the addition of yeast, the Malvasia is aged partly in steel and partly in oak for six months. It then rests just as much in the bottle.
Tasting notes: amber with golden hues, bright and crystal clear. A treasure chest of scents: dates, dried apricots, figs, raisins, hints of vanilla. Elegant freshness for a sweet wine that is not cloying. Long finish with hint of savoriness.
