Sprouting occurred during the first week of April and continued to grow steadily, taking advantage of the abundant water reserves left over from 2014 and a rainfall in the normal range for winter 2015. The season continued with dry and sunny weather, which allowed even development of the vegetative wall. July was very hot and
dry with temperatures 5°C higher than average; thanks to the agronomic choices they have been perpetuating for years, such as fall tillage, green manure sowing and canopy management, the vines were not overly affected by July’s high temperatures. In the first week of August, two major rains provided relief to the vines and lowered temperatures allowing the vines to synthesize aromas, anthocyanins and tannins; of primary importance to the quality of the wines.
Vinification and maturation
The Ripe al Convento vineyard, from which the Sangiovese grapes are sourced, is located at an elevation of 450 meters above sea level and is characterized by schistose and marl soils with a southern exposure. The grapes were harvested by hand after an initial careful selection in the vineyard. Upon arrival at the winery they were subjected to further scrupulous inspection, with manual sorting of each grain. Fermentation took place in temperature-controlled stainless steel tanks with frequent pumping over especially during the early stages to achieve good extraction of color and texture components. The subsequent period of maturation in wood provided excellent stability and increased aromatic and structural complexity. Ripe al Convento is ready for release 6 years after harvest and only after further bottle aging.
Ripe al Convento 2015 has a beautiful, bright, intense ruby red color with delicate garnet highlights on the rim. On the nose, it is the fruity notes that open the dance: blueberry, cherry, sour cherry under spirits. In any case, undisputed protagonists are the tertiary hints due to the long maturation; these notes are perfectly balanced,
None towers above the others. Cinnamon, tobacco, tea leaf, roasted coffee bean and finally a slight note of leather are the main descriptors. Elegant spicing at the end of the sensory journey: white pepper, clove, and cinnamon. Ripe and compact tannins, velvety and silky, caress the palate gently and are beautifully integrated
In the wine matrix. They create a beautiful balance with the acid-alcohol component. Extremely long finish further demonstrating the greatness of the vintage.
