Castello di Neive Piemonte Doc Spumante Metodo Classico Pinot Noir 2019
The Castello di Neive farm was founded in the early 1960s by engineer Italo Stupino and boasts an estate of 60 hectares, 27 of which are planted with vineyards and 20 with hazelnut groves. Aging of the wines takes place in modern, up-to-date winemaking cellars, while at one time in noted winemaker Louis Oudart produced a dry wine from nebbiolo grapes, which under the name “Neive” won a gold medal at the 1862 London Exposition.
The company now produces about 170,000 bottles and has among the best vineyards in the Barbaresco area.
The wines have been produced for more than 30 years by winemaker Claudio Roggero.

St. Agatha Fossil Marls (Tortonian), characterized by bluish calcareous marls.

Area: 1 hectare.
Age of the plants: about 25 years.
Vinification:
After piagiatura, the must remains several hours in cold maceration to allow the migration of aromas from the skins.
Soft pressing yields an illimpidated flower must by flotation. After fermentation at a controlled temperature to naturally inhibit malolactic fermentation, it is transferred to tanks with frequent “battonages.”
Refermentation and maturation is 30 months.
Tasting notes:
A tasty sparkling wine with a pale straw color with rightly present mousse, very fine and well-chained perlage. The nose is rich with the primary aromas of Pinot Noir still present that blend well with well-baked bread crust. It turns out very fresh and structured, with just the right acid balance.
