Nero d’Avola 50%, and Frappato di Vittoria 50%, selected and reim- planted by the az. Gulfi, grown as saplings borne on espaliers. Nero d’Avola, takes its name from Avola, a town near Pachino in the province of Syracuse (neighboring that of Ragusa), where several centuries ago it was selected by local winemakers.
Frappato di Vittoria is an ancient grape variety native to southeastern Sicily. Its origin in the Vittoriose (prov. Ragusa), where it has been cultivated since at least the 17th century, is not certain, though very likely. Planting density:

the grapes, are harvested between late September for Nero d’Avola and in the first week of October for Frappato. They are vinified separately in red, with brief maceration of the must with the skins, at a controlled temperature and brought together at the end of al- colic fermentation.
About seven months on its own yeasts in steel tanks.
In bottle for 1-2 months. It is released in June of the year following the harvest.
Color: deep cherry red with faint violet hues.
Smell: of fresh red fruit, peach and morello cherry with faint floral overtones.
Taste: harmonious, elegant.
Serving temperature: 15-16°C.
Food pairings: Pairs excellently with white meats, tuna and elaborate fish dishes.
