The winery is located in Chablis, France. The vineyards are located on “historic” soils and are characterized by marly-limestone soil, as well as a subsoil rich in minerals and fossils, which give Chablis wines their characteristic minerality. The key to success is the cultivation on these soils of one of the noblest existing varieties, Chardonnay. Territory, however, is not alone in determining the production of exceptional wines. It is also the knowledge and experience of men that allows an area to express its potential to the fullest and produce wines of quality and true to their origins. At Domaine William Fèvre all this is accomplished at every stage of production: manual harvesting in small crates, careful selection of grapes, soft crushing, balanced filtering according to the vintage and proper maturation.
