Champagne Jose Ardinat Oeil De Perdrix
When tasted, it surprises with its pink and orange reflections that stand out primarily in the foam, which fascinate and invite you to taste it. The wine offers a very wide range of colors: gray gold, pale pink, salmon and some brick nuances.
Its bouquet is quite powerful. A pulpy fruitiness emanates with elegant smoky, toasted notes.
The aftertaste is sweet and greedy. This cuvée will go well with most hot desserts but also with some sweet and savory dishes of Asian origin.
It was Serge FAUST, father of Joëlle, who decided since 1968 to adopt agrobiological production processes on his own lands. No predefined production model was suggested to the pioneers of this type who had to “invent” a new method of cultivation. The risk was great because the conversion affected the entire vineyard. In the early days, the feeling of discovering a new way of cultivating the vine aroused enthusiasm but at the same time, doubting was part of everyday life. The difficulties will not affect the will of the family, on the contrary they will make it more united around this ambitious project.
The “organic viticulture” will undergo profound changes but how far has come from the beginning …
At the first steps in “BIO” viticulture, Serge Faust initiated the conversion to the LEMAIRE-BOUCHER method.
