Burgundy: It all began when Alice and Quentin Beaufort took over a vineyard in Prusly sur Ource, on the Cote d’Or in Burgundy. Only a few kilometers away from Champagne, the area is particularly suited for pinot noir and, in terms of climatic conditions, resembles those of Polisy, in the aforementioned Champagne.

Fine and elegant scents. Fossils and stalactites. Small red fruits, 75% extra dark chocolate. Salted green pistachio, crème brûlé and citron peel. Noble and assertive, vertical sip. Very fine and delicate bubbles, perfectly integrated with the body of the wine. Saline. Vibrant compendium, turns out interminably. Unbreakable, continental freshness. Freshly picked red fruits like fresh strawberries. Wide and enveloping. It is desirable with fruity and mineral characters, puff pastry and pine nuts. Commendable closure, great balance, harmonious. Long, decisive and evocative, graceful complexity. Long-lived. Recognizable.
Indulge in the experience. Advice? Mortadella, oysters, crab claws and anchovies. Pasta with sardines, but also duck breast and cockerel breast.
