SOMMELIER’S NOTES
The nose is complex: citrus, granny smith and vine peach.
The effervescence is smooth and creamy. The attack on the palate is frank and rich. There is a chalky meatiness, punctuated by toasty notes.
Soutiran Champagne
The maison cultivates 6 hectares of vines, most of which are located in the terroir of Ambonnay.
Some 1er cru plots in the communes of Trépail, Chigny les Roses, Ludes and Chamery are used to produce the estate’s first cuvée. Added to this production is the purchase of grapes from our surrounding area, part of whose vines are cultivated by us.
The vines are cultivated in a reasoned manner with a view to sustainable viticulture.
Following soil testing, contributions are made only with organic fertilizers on deficient plots.
Tillage limits the use of herbicides.
Barrel-fermented wines are kept on fine lees without racking until blending. More or less batonnage is carried out depending on the profile of the years.
Before bottling, the wines are cold stabilized and filtered with clay.
Once bottled, the cuvées rest on laths between 5 and 8 years before disgorgement.
Dosage is redefined annually for each cuvée by laboratory tests, followed by a blind tasting.
After disgorgement, the cuvées rest for an average of 6 months before labeling and marketing. This rest period ensures the homogeneity of the wine.
