Clairin Vieux Sajous Rum 4 Years Old Cask Strength 2nd release
Clairin Sajous is produced in the grand terroir of St. Michel de L’Attalaye, about a 4-hour off-road drive north from Port au Prince. It is made from Cristalline cane, one of the best ancient varieties now grown only in Haiti, hand-picked at perfect maturity and transported on the backs of animals to the distillery. It is pressed in the small mill more gently than the typical way in the French West Indies. Fermentation starts spontaneously with indigenous yeasts. The distillation still is heated by the fire of “bagasse,” the squeezed and sun-dried cane fiber. Aged totally in the tropical climate of Port-Au-Prince from a selection of Ex-Caroni and Ex-Single Malt Scotch Whisky barrels, Vieux Sajous is the first Clairin to become a full-fledged rum as it passes 4 years of age.
