Vinification and aging: Spontaneous fermentation and maceration on the skins for 10 days in stainless steel – Aging in stainless steel – Bottling with addition of fresh must from dried Glera and Bianchetta Trevigiana grapes – Re-fermentation in bottle
The result
Tasting Notes: Intense straw yellow with golden hues. Variegated olfactory bouquet with fruity and floral hints of wildflowers, hawthorn and acacia, fragrance of medicinal herbs, slight spicy touch reminiscent of green cardamom and ginger. On the palate, synergistic freshness and savoriness are accompanied by fine, well-integrated carbonicity. Closes with delicate astringency.
Pairing: A satisfying, tasty sparkling wine with excellent drinkability, versatile in food pairing, also to be tried with exotic cuisine dishes, such as a chicken and vegetable tajine.
