Pinot Noir is deliberately not aged in wood to highlight its ability to translate the minerality of the soils; the presence of Chardonnay is the completion of the interpretation that our sparkling wine house wishes to offer the territory.
Vineyards are located on the hilly ridge from Strevi to Castino, a collection of varied expressions of territory placed at an altitude of up to 450 m asl
Maturation of the Cuvées for seven months in steel on their own yeast
Malolactic fermentation does not take place
Tirage at the turn of April and May to coincide with the flowering and ripening of fruit trees.
Dosage 6 g/L
Straw-yellow color with golden hues, with very fine-grained perlage and great persistence. The nose has an opening characterized by classic bread crust sensations and a minerality reminiscent of flint; as the wine acclimates to the glass, the character of the Cuvée emerges, expressing ripe yellow fruit and at the same time nuances of currants.
The action of the air in the glass continues unveiling a floral reminiscent of wisteria. Slightly roasted notes of hazelnut are also present. The palate is crisp, savory, structured, and fresh, with barely hinted hardness.
Pair with main courses, preferably raw meats, tempura, seafood and intensely flavored vegetables. White truffles and aged cheeses also go well with this wine.
