Del Grillo peeled tomatoes are made from organically grown tomatoes grown on the family’s land located in the municipalities of Alcamo and Vita (TP). The structure of the soils is sandy and the low water supply means that the tomato (called precisely siccagno) ripens and develops only with the natural moisture brought by the temperature range between day and night, favored by an average altitude of 400 meters above sea level.

When they reach the right degree of ripeness, they are harvested and selected strictly by hand. Within hours of harvesting in the field, the tomatoes are washed, blanched and peeled. They are then placed in glass jars with tomato juice added, sealed with airtight caps, pasteurized and cooled to room temperature.
