Dolin Vermouth Rouge 16° Cl 75
The Dolin company is a distillery and producer of Vermouth. The history of this maison is full of crucial steps that have helped create recipes and labels that have become legendary over time. A pioneer in the founding of this tradition is Joseph Chavasse: a liqueurist and master distiller, at age 25 he established his distillery in Les Echelles in Savoie, using the florid Chartreuse mountain for the collection of officinal plants essential to the production of elixirs. Inspired by the tradition of producing aperitif drinks in the nearby city of Turin, Chavasse invented a recipe for a Vermouth in which white wines from the nearby valley are infused with a wide variety of mountain herbs and spices.
Production takes place entirely in Chambery, as per specifications, and involves the maceration of 54 hand-picked alpine botanical species, without the use of pre-mixed infusions. Sugar is added minimally, and the color of Rouge is not due to the use of basic red wine but from the plants used and muscovado sugar.
PROFILE: soft, ripe fruit. Aromas in the mouth of almond, cinnamon, hazelnut and citrus. The very rich bouquet is held together by a subtle bitter note.
