A RADICAL ASSEMBLY
2008 was characterized by the predominance of gray and cloudy skies, a singular condition in a decade of incredibly generous sunshine. Spring and summer also suffered from lack of light and heat. Then, the month of September-as belatedly as miraculously-saved the vintage. Just as the harvest was about to begin, on September 15, conditions were perfect: blue skies and winds blowing from the north-northeast. The collection took a long time to take full advantage of this unexpected gift. The maturity of the grapes exceeded all expectations, achieving an unprecedented and exceptional balance. The clusters were perfectly healthy.
Dom Pérignon created Vintage 2008 with a bold blend made from pinot noir grapes. The fruit and structure of these grapes give rise to a balanced tension between the precision and natural brightness of fuller, more intense wines.
TAME THE FORCE OF VITALITY
The bouquet immediately opens to aromas of raspberry and wild strawberry. Powdery notes of iris and violet soon merge with the fruity aromas and persist. Letting it breathe, the wine reveals greener hues, evoking privet, angelica and camphor leaves. The first sensations are tactile, fleshy, silky. They unfold like a caress that, little by little, becomes more firm. The acidic texture, a signature of this vintage, creeps into the structure of the Pinot Noir and makes the heart of the wine pulsate. The finish, with hints of peony and white pepper, is firm and persistent.
PAIRINGS
Dom Pérignon Rosé Vintage 2008 is an invitation to explore the frontiers of winemaking and the boundaries of gastronomic experiences. With Alain Ducasse and Albert Arià, as part of the ADMO partnership, Dom Pérignon created an ideal pairing of cauliflower lightly coated in black mole, a sauce made with cocoa, herbs, and roasted spices, inspired by Mexican cuisine. It all gives a spicy, concentrated, rich and complex appearance, which wins the wine with depth, structure and body.
