Production area: Contrada Santo Spirito, Passopisciaro, Etna | North exposure.
Grapes: Nerello Mascalese 90% – Nerello Cappuccio 10%.
Altitude: 750 mt. s.l.m.
Soil: black and brown volcanic sands; pebbles and effusive rocks. Soil rich in skeleton.
Training system: small tree supported by chestnut poles. Plants up to 100 years of age.
Strains / Ha: on average 8000 plants / Ha.
Average yield per hectare: 40 quintals.
Harvest: manual, with selection on the plant, at the end of October.
Vinification: fermentation in truncated conical French oak vats with selected indigenous yeasts. Malolactic fermentation completely carried out.
Aging: 24 months in oval French oak barrels (Ovum) and 18 months in bottle.
Tasting: with a bright ruby ​​red color, it has an elegant and intense bouquet with hints of small red fruits, orange and violet peel, which blend with spicy and balsamic notes. On the palate it is complex and vertical, characterized by a refreshing minerality and tannic structure.
Alcoholic content: 13.5% vol.
Serving temperature: 18-20 ° C.
