Quintodecimo Exultet Fiano di Avellino DOCG 2022
Quintodecimo Exultet Fiano di Avellino DOCG 2022 is a wine that takes its name from the Exultet of Mirabella Eclano, an ancient liturgical scroll from the Middle Ages that included tributes to bees. These scrolls, a kind of ante litteram “multimedia,” combined Benedictine texts with musical notations and miniatures.

- Time of Harvest: Late September – first decade of October, hand-picked in small 15 kg boxes at full aromatic ripeness of grapes
Vinification: After a long pressing of whole clusters, the must is separated into two parts, strictly protected from oxygen. The draining must is illimpidated by natural sedimentation. Fermentation takes place 70% in stainless steel vats and the remaining 30% in new oak barrels. This is followed by an eight-month period of elevage on fine lees regularly resuspended in the wine.

- Color: Bright yellow with green highlights
- Fragrance: Sharp varietal scents of linden, acacia and thyme
- Taste: Dense and continuous structure with aromas of exotic fruit, candied citrus and honey in a light mineral matrix. The short stay in small oak barrels during fermentation gives the wine a special elegance. It is a long-lived wine that can age well for several decades due to its richness in aroma precursors, freshness and flavor integrity.
