Quintodecimo Exultet Fiano di Avellino DOCG 2022
The name given to the wine originates from the Exultet of Mirabella Eclano in which a tribute to bees is also reported. Exultets are liturgical rolls from the southern Middle Ages. They are a kind of ante litteram multimedia product consisting of sheets of parchment sewn together on which the text of the benedictio cerei is transcribed, accompanied by musical notations and illustrated by miniatures running in the reverse direction of the writing.
Variety: Fiano Production area: Lapio. Altitude: 570 meters above sea level.
Exposure: south/west. Soil: clay/limestone. Planting density: 4000 vines per hectare.
Cultivation and pruning system: simple horizontal counter-espalier with Guyot pruning.
Yield: 1.2 kg per strain.
Harvest time: late September – first decade of October, hand-picked in small 15 kg boxes at full aromatic ripeness of grapes.
Vinification: after a long pressing of whole clusters, the draining must, strictly protected from oxygen, is separated from the press must and clarified by natural sedimentation. Fermentation takes place 70% in stainless steel vats and 30% in new oak barrels. This is followed by an eight-month period of elevage on fine lees regularly resuspended in the wine.
Organoleptic characteristics:
- View: bright yellow with green highlights.
- Nose: expresses crisp varietal scents of linden, acacia and thyme.
- Taste: of dense and continuous structure develops aromas of exotic fruit, candied citrus and honey in a very slight mineral matrix.
Its particular elegance also derives from the short stay, during fermentation, in small oak barrels. It is a long-lived wine that can age well for several decades due to its richness in aroma precursors and its freshness and integrity of taste.
