Grillo grown on the Borgo Guarini estate fully expresses the peculiarities of the terroir of origin. The hilly climate, with its greater temperature ranges than the coastal area, brings to these grapes a richer and more intense aromatic set of thiols and aromatic precursors. It is the rising grape variety in Sicilian winemaking that is usually grown near the coast. Firriato, on the other hand, has chosen to raise it in the hilly areas of the Borgo Guarini Estate, which is characterized by a microclimate subject to greater temperature ranges that, in combination with the action of the wind, allow it to obtain, in vinification, a wine with a broad aromatic range and with greater freshness, when compared to other wines made from Grillo grapes traditionally grown along the coast
