It is a perfect combination of vines rooted in volcanic soils and the mountainous climate that only Etna can offer. The evocative goblet of the famous, centuries-old Nerello Mascalese sparkling white wine at Cavanera’s winery on Etna is an example of absolute style. Sparkling takes place according to the “blanc de noir” method to enhance the organoleptic characteristics of Nerello Mascalese. After soft pressing of the unstemmed grapes, vinification takes place inside the cellar carved out of the typical Etnean baglio dating back to the 17th century. Gaudensius is a sparkling wine with refined perlage, fine-grained, continuous and persistent, characterized by colors with shades tending to bright gold, with a complex flavor and at the same time rare elegance.
