Franz Haas Sauvignon Alto Adige DOC 2021
Sauvignon has a light straw yellow color with greenish highlights. The nose seduces with a colorful bouquet of aromas, including elderflower, white peach, complex notes of dried fruit and oriental aromas. The palate releases a lively and savory acidity with mineral notes, while the finish is very persistent and stimulating and has a pleasant fullness and elegance.
AREA OF PRODUCTION
The white Sauvignon vines are grown by Guyot and grow between 400 and 800 meters. Soils originated from dolomitic erosion, facing south and southwest.
METHOD OF WINEMAKING
The crushed grapes are gently pressed after spending a night of maceration at low temperatures. Part of the must is fermented in steel tanks and part in barriques, after which it matures in the same containers for about eight months in contact with fine yeasts.
PAIRING
This Sauvignon is not an everyday wine; rather, it is a good match for dishes such as tuna tartare, veal tonnato, white meats and lightly spiced Asian dishes. It is a wine that invites experimentation and discovery of new pairings and ingredients from distant countries.
