Gibelè, the mountain of the Island of Dammusi. A white from the zibibbo grape, dry and fresh, with intense aromas of jasmine, green apple and cedar.

TERRITORY OF ORIGIN Agro di Petrosino and Mazara del Vallo Province of Trapani
TERROIR Soil: volcanic and clay-textured. Altimetry: 0 to 400m above sea level. Climate: Mediterranean, mild winters, limited rainfall, very hot and windy summer.
VINIFICATION AND AGING Traditional harvest, starting in the first decade of September. Partial maceration, soft pressing and temperature-controlled fermentation. Aging in cellar for 4 months, completes in bottle.
TASTING Color: straw yellow. Nose: intense, jasmine and lavender, with hints of green apple and cedar. Taste: dry and fresh, with long aromatic persistence of citrus, yellow peach and green apple.
PAIRINGS Enhances fish soups, raw fish dishes and shellfish. Serve at 8°-10°C.
