Grappa EVO
is a grappa (grape marc distillate) that is defined by law as “riserva” because it rests more than 18 months in wooden barrels. The barrels used are barriques of different woods (chestnut, cherry, beech) and not necessarily first cycle.
Each type of wood individually contributes to the specific characterization of the product.
EVO contains no added dyes. Its “nuance” is the result of its stay in barrique. The way the containers are treated and the different types of wood used, yield unexpected organic substances and colorants to this distillate. Thanks to new processing techniques, EVO grappa has an extremely low (“trace”) essential oil content, promoting easy drinking and increasing digestibility; it also has amounts of “methyl alcohol” at the legal minimums.

Distillation system: discontinuous bain-marie and steam boiler. The plants operate in vacuum environments
Pomace: blend of Cabernet Sauvignon, Glera and Incrocio Manzoni
Aging woods: barriques of different native woods. Chestnut, Cherry, Beech
Ageing time: average of four years
Color: deep brown with amber highlights
Nose: On the nose there are notes of raisins mixed with sensations of licorice, walnut, cinnamon and vanilla. A “sweet” aroma of ripe date, creme-caramel, nougat and carob further characterize the elegant bouquet. No alcoholic “pungency” can be felt
Taste: fine and intense, with hints of cotton candy, vanilla, ripe plum and citrus notes. A complex and velvety taste
Aftertaste: dried fruit tones and spicy notes are softly enveloped by a pleasant alcoholic sensation
