EVO is a grappa (marc distillate) which by law is defined as a “reserve” as it rests for over 18 months in wooden barrels. The barrels used are barriques of different woods (chestnut, cherry, beech) and not necessarily of the first cycle.
Each type of wood individually contributes to confer a specific characterization of the product.
EVO does not contain added dyes. Its “nuance” is the result of its stay in barrique. The methods of treatment of the containers and the different types of woods used give this distillate unexpected organic substances and dyes. Thanks to new processing techniques, EVO has an extremely low content of essential oils (“traces”), favoring an easy drinkability and increasing its digestibility; it also has quantities of “methyl alcohol” at the minimum required by law.
