consists in having “married” the strong personality of vegetable peat smoke (smoking prior to distillation) with the softness of Cherry. FUMO is a blend and thus the result of an assemblage of several eaux-de-vie, made from marcs of different types and different vintages.

grappa EVO SMOKE
consists in having “married” the strong personality of vegetable peat smoke (smoking prior to distillation) with the softness of Cherry. FUMO is a blend and thus the result of an assemblage of several eaux-de-vie, made from marcs of different types and different vintages. Each type individually gives a specific characteristic to the product. FUMO may show slight differences in color and organoleptic profile from batch to batch and given its originality may create slight sediment. This helps to further enhance its characteristics of absolute authenticity and craftsmanship.

Distillation system: discontinuous bain-marie and with steam current boilers
Pomace: blend of Cabernet, Glera and Incrocio Manzoni
Aging woods: barriques of different woods. Native cherry and to a small extent Oak
Barrel life: close to four years
Color: deep brown with amber highlights
Aftertaste: great presence of ripe plum, dried fruit and spicy notes. The alcoholic sensation is stimulating, but soft and fascinating majestic persistence
