Distillation Method: The use of discontinuous stills, operating in a vacuum at temperatures below seventy degrees centigrade, preserves the fragrance and aromas of the pomace to the maximum. This process limits the extraction of essential oils from the grape seeds, giving the distillate a unique richness and complexity.
Wood Aging: Grappa Gaja Barolo is distinguished by its distinctive amber color, achieved through aging in small wooden barrels. This stage of maturation gives the distillate depth and roundness, further enriching its flavor profile.
