Grappa Gaja Rossj Bass
Gaja, Ca’Marcanda and Pieve Santa Restituta grappas are produced at the Cooperative Distillery of Barbaresco founded in 1980. They are produced by distilling fresh pomace: the distillation period begins in mid-September and ends in November. After fermentation, the pomace, still soft and juicy, is prepared for distillation, which is done slowly using a discontinuous copper still that, working under vacuum, allows it to operate at temperatures below seventy degrees centigrade, preserving fragrance and aromas in the distillate. This yields a distillate with an alcohol content ranging from 70 to 75 percent vol. which, before bottling, is diluted with distilled water until the alcohol content is brought to that indicated on the label. This produces a white grappa with a strong, broad, juicy and satisfying taste. Another part of the production is allocated to careful aging in small wooden barrels with a capacity of 225 liters for about a year: then this product is added with distilled water until the alcohol content stated on the label is reached. This aging process brings an amber color to the final product and a softer, rounder, more harmonious flavor with good persistence.
