The tale of a dream.
June 13, 1995:
Jacopo Poli visits the most prestigious Château Premier Cru in Pauillac (Medoc), France and dreams of distilling its pomace.
October 18, 2007:
due to a thousand obstacles the dream seems unattainable but courage, perseverance and passion solve the difficulties.
After 12 years of siege, the castle gates finally open and Jacopo can enter to prepare the marc for transport.
October 23 and 31, 2007:
pomace is transported from the Château de Pauillac to the Schiavon distillery in insulated trucks. Four drivers travel all night to ensure maximum freshness.
October 24-25, November 2-3, 2007:
Andrea and Jacopo set to work. The historic steam still is ready to go into action.
For the first time in the history of Grappa, the best pomace from France is distilled in Italy.
April 29, 2008:
after six months of resting in steel tanks, the spirit is put to age in 11 barrels produced by the Château’s cooperage.
June 13, 2016:
after 8 years of aging and 21 years of patient waiting, the dream comes true: the first batch of Poli La Première is bottled.
The result is a majestic and solemn spirit that retains the aromas of the classic Bordeaux blend and blends them with pure Venetian passion.
