Guiborat Champagne Prisme.17 Extra Brut Grand Cru Blanc de Blancs
Prisme is a cuvée produced from 4 parcels of Côte des Blancs, Grand Cru: Cramant, Les Bergeries (1984)-Chouilly, Le Mont Aigu (1970 and 1979) and Les Caurés (1946 and 1998)-Oiry, Gros Mont (1969). They are all vines over 30 years old.
Varietal: 100% Chardonnay
Prisme.17 was produced with grapes from the 2017 vintage, with the addition of “vins de réserve” from 2016.
Vinification: obtained only from the first pressing of grapes. Matured on the lees mostly in stainless steel and in 400-liter barrels without malolactic fermentation.
Cellar rest on lees: 44 months.
Dosage: 1.5 g/l.
After dégorgement it rests for at least another 6 months in the cellar before marketing
Guiborat Champagne
Richard Fouquet, a young vigneron not yet 40 years old, represents the fifth generation of winemakers at the Champagne Guiborat family maison. The vineyards are located in the heart of the Côte des Blancs, beautiful plots in the prestigious terroirs of Cramant, Chouilly and Oiry.
Together with his wife Karine, Richard runs his 8 hectares of vineyards under a “raisonnée” farming regime, concentrating his own production in the Grand Cru plots on an area of about 3 hectares, for a very limited production of less than 30,000 bottles/year. About 80,000 bottles rest in the winery’s underground tuff cellars.
The work is carried out by Richard with passion, extreme rigor and commitment to preserving the vineyards and the environment.
A continuous quest for excellence is pursued, with the intention of producing precise and refined Champagnes, pure fruit of their terroir of origin. Precise choices are made in the winery, such as limiting or avoiding malolactic fermentation altogether in order to favor the acidity of the wines. The pursuit of perfection sometimes drives drastic choices: all grapes from the 2012 vintage, reputed to be below average in quality, were sold to third parties in order not to put Champagne on sale under their own label.
It can be said that the Champagne region was for a long time very commercially stable, with large companies leading the rules of the market. Challenging established tradition is only possible through excellence, following a fine line between the past and new original ideas. Thanks to its own choices, Champagne Guiborat is recognized as a brand on the rise, sought after for the purity of the wines produced, a high expression of the best Grand Cru of the Côte des Blancs.
