Vinification and Aging
Once in the winery, the clusters are destemmed and processed according to a “nonreducing” technique, that is, without any addition of SO2: the indigenous microflora thus has a chance to develop and characterize the must. The 1-3 hours of pellicular maceration of the grapes optimizes this process. After a 24-hour static decantation, the must undergoes alcoholic fermentation in stainless steel at a controlled temperature of 16-18°C. The wine is then subjected to aging before bottling.
Tasting Notes
Bright yellow color. Great aromatic liveliness. Intense nose of pear and golden apple. Palate: lively with notes of apple, pear and banana. Fresh and persistent finish.
History of the Label
The label bears an optical study from the Encyclopédie Diderot, a vast encyclopedia published in the 18th century and the first example of a modern encyclopedia with wide circulation. The inspiration for this label came from British director Peter Greenaway’s film “The Draughtsman’s Contract,” which repurposes, in an eighteenth-century key, the theme of the relationship between reality, itself ambiguous, and its representation, which, far from allowing its decipherment, makes it even more complex and impenetrable.
