Jamón De Bellota Pre-sliced Blazquez 50 % Iberian Breed
The term bellota comes from the food that Iberian pigs are most fond of, namely “bellotas” acorns: wide open spaces, very few pigs free to graze in herds, acorns rich in oleic acid that will give their meat a unique flavor for one of the most extraordinary taste experiences ever. When the montanera period begins, Blázquez releases a selección of his best Iberian pigs so that they can feed and fatten in the most natural setting possible, living in the wild on more than 30,000 hectares set aside for pasture.
When released into the wild, the pigs weigh approximately 90 kg: by the end of the montanera period, between January and March, they reach over 180 kg! They will gain 1 kg a day by eating 10 kg of acorns every 24 hours. But for pigs to reach their ideal weight, relying exclusively on acorn feed, their density must be very low: one pig for every two hectares of land.
Blázquez is the first producer in the Salamanca area where there is the Guijuelo Designation of Origin, the first historically to be established in Spain.The ham from this region is characterized by a delicate, fruity and sweet flavor. Blázquez, in compliance with regulations, works with selected females of 100% pure Iberian breed, with the unmistakable flavor and genetic peculiarity of assimilating oleic acid, and 100% Duroc and Iberian males, which instead give that sprint of internal fat and consequently delicacy to the taste.
