KI NO TOU Kyoto Old Tom Gin 47.4° Cl 70
HISTORY: Kyoto Distillery is Japan’s first craft gin distillery. KINO BI Kyoto Dry Gin is inspired by tradition and distilled and bottled in Kyoto by Alex Davies together with master blender, David Croll and Marcin Miller.
PRODUCT: KINOTOU is the new Old Tom Gin in the range. An exclusive bottling, surely Japan’s first Old Tom Gin, made for the Tokyo International Bar Show. The classic KINOBI recipe is sweetened after distillation with kokutou (literally black sugar) from Yanaguni Island in the Okinawa district. Kokutou since the 17th century has been produced in such a way as to maintain greater minerality than all other sugars. It therefore turns out to be sweeter and more complex. The label bears two kanji, meaning relatively “island” and “sugar.”
PROFILE: Soft and elegant, marked presence of juzu as in the original version. The increased sweetness emphasizes the flavors. Tea and warm notes of ginger are evident.
