Vinification and aging
Spontaneous fermentation with indigenous yeasts, no malolactic fermentation, maturation in stainless steel on fine lees for 12 months, and 6 months bottle aging.
Sensory description
Bright white with greenish hues,
Intense, slightly aromatic aromas of fresh tropical fruit, pineapple, white peach and lychee, white musk, rose, lemon slush, lava stone and salt.
The palate is harmonious, extremely fresh, fine and vertical, saline and persistent. It recalls the snow-white freshness and saltiness of the Mediterranean.
Food pairings
It goes very well with raw fish dishes,
seafood, oysters, shellfish and wild asparagus.
