Lapierre Bailly Cremant De Bourgogne Pinot Noir
The village of Bailly, located southeast of Chablis, can be considered the cradle of Crémant de Bourgogne.
Founded in 1972, Cave de Bailly Lapierre today has 430 contributing members. It immediately championed sparkling wines produced in Burgundy and promoted the process for the creation of the AOC Crémant de Bourgogne, which the INAO (Institut National des Appellations d’Origine) granted in 1975 as the first Crémant AOC in France. The winery is fifty meters underground, and the galleries, which cover an area of four hectares, permanently house five million bottles. Natural conditions are ideal for sparkling and storage: constant temperature of 12°, high natural humidity of 80 percent, and soft light to preserve organoleptic quality.
